Pineau des charentes is made of a mixture of grape juice from the Charentes region or "must" and cognac. The alcoholic strength of the cognac then stops at the beginning of fermentation keeping all the natural sweetness contained in the grape juice.We consider it important to choose the grapes at their optimum maturity to obtain a juice rich in sugar and not acid. Moreover, the cognac that we use, which is a Grande Fine Champagne cognac, from the Premier Cru, gives the pineau a maximum smoothness, finesse and aroma.
Like cognac, pineau des charentes ages for several years in barrels made of Limousin oak, where it takes on an amber colour while the mixture of cognac and grape juice become more "intimate".
Different qualities
- White pineau, made from grape juice coming from grape varieties used for cognac production (Ugni blanc, Colombard).
- Rosé pineau , made from red grape juice (Merlot and Cabernet variety).
- Very old white pineau is a white pineau aged in oak barrels for 10 years. It becomes slightly more liqueur-like while its aroma, bouquet and "rancio" (type of maderization) are magnificently developed. Very appreciated by pineau enthusiasts, this quality is practically unique on the market.
